Breakfast Muffins

Breakfast muffins

 

Wheat-free, high fibre, high protein, negligible sugar.

Instructions

Preheat oven to 350°C.

Mixmaster together:

  • 6 eggs

  • 3 cups coconut or oat milk

  • 1/4 cup coconut oil

Mixmaster into above and let sit while preparing below ingredients:

  • 1 cup coconut or oat flour

Mix and add to above:

  • 5 scoops vanilla protein powder

  • 1 tbsp cinnamon

  • 1 tsp ground cloves

  • 1 tsp nutmeg

  • 2 tsp baking powder

  • 2 tsp baking soda

  • 1/2 cup freshly ground flaxseed (grind in food processor or coffee grinder)

  • 1/2 cup ground chia seed

  • 2 cups of raisins or blueberries (or 1 cup of each)

  • 1 cup chopped apples or dates

Line large muffin tray with large muffin cups and fill 1/2 full.

Sprinkle the tops with pumpkin seeds.

Bake 20-25 minutes or until passes toothpick test.
