Breakfast muffins
Wheat-free, high fibre, high protein, negligible sugar.
Instructions
Preheat oven to 350°C.
Mixmaster together:
6 eggs
3 cups coconut or oat milk
1/4 cup coconut oil
Mixmaster into above and let sit while preparing below ingredients:
1 cup coconut or oat flour
Mix and add to above:
5 scoops vanilla protein powder
1 tbsp cinnamon
1 tsp ground cloves
1 tsp nutmeg
2 tsp baking powder
2 tsp baking soda
1/2 cup freshly ground flaxseed (grind in food processor or coffee grinder)
1/2 cup ground chia seed
2 cups of raisins or blueberries (or 1 cup of each)
1 cup chopped apples or dates
Line large muffin tray with large muffin cups and fill 1/2 full.
Sprinkle the tops with pumpkin seeds.
Bake 20-25 minutes or until passes toothpick test.
